Rheological Characteristics of Aqueous Solution of Korean Sodium Alginate

Abstract

|
Rheological behaviors of sodium alginate solution were invetigated by using Brookfield rotational viscometer. 3.0% sodium alginate solution showed a tendency for dilatancy with yield value at 25¡É and 0.3¡30 rpm. The observed ranges of equivalent apparent viscosity and equilibrium yield value were 2000¡8810cps and 1330¡5200 dyne cm^-2, respectively. 2.0% sodium alginate solution that was freshly prepared, showed both dilatancy, in which the apparent viscosity increases with a decrease in rpm. On the other hand, 2.0% sodium alginate solution after 3 month¢¥s storage showed dilatancy, in which the apparent viscosity increases with an increase in rpm and the apparent viscosity decreases with a decrease in rpm. Variation of consistency of 1.0 and 1.5% sodium alginate solution with temperature was found to follow Andrade¢¥s viscosity equation and the apparent energy of activation to flow as calculated on the basis of this equation was 11.3kcal/g¡¤mole and 25.3kcal/g¡¤mole respectively.
